Is this a cube of ganache to enjoy frozen? This is the promise of this chocolate innovation by Nicolas Cloiseau. His idea: to recreate the feeling of a frozen chocolate mousse but without ice cream. He kept the cream in his ganaches, he also kept the chocolate taste and intensity, only the texture changed. It is by incorporating his ganache into a milk foam that he obtains the desired structure.
